I Love Sprouted Bread

About a month ago I was lucky enough to attend Good Food Chicago. Great food brands, lots of samples to try – what’s a better way to spend a Saturday? Manna bread bakery was one of awesome brands at the expo with a lot to offer. I mean A LOT! Try imagining  any bread you can possibly imagine: sourdough, gluten free, sprouted, and wheat; bread with walnuts, bananas, sun seeds, figs, fennel and multigrain. I swear my head was spinning – I had to learn more!

MANNA BREAD® is remarkably simple and wholesome, made entirely from sprouted organic grains, seeds, fruits & nuts. It contains no salt, leavening, yeast, oil, or sweeteners. By fully germinating our grains, we convert the starches into easily digested natural complex sugars, similar to those found in fresh fruits, hence the sweetness. The sprouts are ground and hand-shaped into loaves, baked at a low temperature, then packed and frozen to preserve shelf life, without any chemical additives.

Would you like to compare it to a loaf of commercially prepared whole wheat bread?

Every bread I tried from Manna bread was simply delicious! I especially enjoyed the breads with nuts and fruits. I actually love toasting and having it with tea. The sweetness of fruits makes it a great desert without the empty calories I would get from a piece of pie. For this occasion I like to keep a loaf in a freezer and when a time comes, just get a slice, toast it Vu à la - sweet tooth special. I think Fruits and Nuts, Fig Fennel Flax, Cinnamon Date or Banana Walnut Sprouted breads would be perfect for the occasion.

It is also great in a salad. Considering how much good stuff is in a slice of sprouted bread, it makes a great addition to any salad. Carrot Raisin, Multigrain, Sun Seed, Whole Rye – either one of these sprouted breads would be great in your salad.

  2. I think we just saw Manna bread at Whole Foods. I checked it out for a split second before my 3 year old was asking for a cookie from their bakery. I’ll have to pick up some next time we go to the market. And I’ll definitely be back for the giveaway!

  3. I can’t imagine how the bread sticks together with the only ingedients being sprouted wheat and water. I’ll keep my eyes open for this at our co-op. It sounds really good.

  5. This bread sounds great. Never thought of putting it on a sald, though! Although I guess that’s essentially croutons. :) It looked great!

  6. Manna says they don’t add yeast but that doesn’t mean there isn’t yeast in their bread. Yeast collects naturally on the grain in the field because yeast is omnipresent everywhere. We don’t add yeast to our sprouted breads but we don’t claim our breads aren’t leavened because they are. Naturally. Yeast molecules love our sprouted wheat mash and naturally find their way to it during the fermentation process. We take advantage of this symbiotic relationship between micro-organisms – a process that primitive cultures developed centuries ago – and that gives our bread considerable ability to rise without adding commercially derived yeast. Is ours a better bread than manna’s? No, that depends entirely on one’s taste. Is is different? Yes. It’s lighter, with an airier crumb because we embrace what nature offers.
