Another Dinner on the Run with La Morena and Extra Cheese

I have learned the hard way that any time I attempt to cook complicated dishes… I screw up. The rule of thumb: the more ingredients and steps, more opportunities for things to go wrong. I call it my special power. You will probably agree that it doesn’t take a real talent to get things done wrong and I am naturally good at it.

And that is why I love simple dishes. Ready to try another dinner on the run? Buckle up and let’s get cooking!

My favorite trick is to make a double helping of just about anything I cook, and in this case it means doubling the recipe on the patties and freezing half. This dish has a great Spanish flare and is a great way to add some new flavor to a family dinner.

Gluten Free chipotle sliders with extra cheese

(Inspired by Pati’s Mexican Table)

INGREDIENTS

Patties

  • 2 lbs. ground beef (4 lbs. if you plan to freeze half)
  • 1/2 of large onion, finely chopped
  • 3 garlic cloves, pressed in garlic press
  • 3 tbsp. of sauce from chipotles in La Morena adobo sauce
  • 1 chipotle pepper in adobo sauce, seeded and finely chopped, more to taste
  • 1 tsp. kosher salt
  • ¼ tsp. ground black pepper
  • Olive oil, to grease the grill

Avocado spread

  • 1 avocado, mashed
  • 2 tbsp. mayonnaise
  • 2 tbsp. lime juice
  • ¼ tsp. kosher salt
  • 8 slices Monterey Jack cheese

Udi’s gluten free burger buns (or your other favorite gluten free buns), cut in quarters (or hot dog buns cut in thirds).

If you can operate the outdoor grill quick, more power to you. Since I am dancing around the kitchen, I will use my trusty George Foreman grill. While waiting for the grill to heat up to a high setting, I get a genius idea of getting kids involved – mix the beef with the onion, garlic, adobo sauce, chipotle pepper in adobo sauce, salt and pepper until well mixed. (This looks like a great sensory activity for the kids as long as they don’t attempt to eat the raw meat). My kids love to get messy and I am taking full advantage of it!

Make 16 round patties, about 3/4-inch thick, and place them on the grill (don’t forget to brush the griddles with olive oil. 4 minutes into the grilling, flip it, put a thin slice of cheese on top and grill for another 4 minutes.

Have time for avocado spread?

If your answer is HECK YEAH, listen up:

Mash avocado with a fork until smooth. Add mayonnaise, lime juice, chives and salt, blend well. Set aside.

When the patties are done, put some avocado spread on the bottom bun, place a patty on top, and cover it with the top part of the bun.  slider-avocado

    I used those same chipotle peppers in a chip dip last July and they were AWESOME! I was just thinking how they would spice up a burger perfectly! What a great idea!

    We grill year round here on SoCal- I have seen La Morena on the shelves but not had a chance to try it yet. This recipe looks delicious, especially with the avocado spread!
