Very Cheese Broccoli

Pinnable-Cheesy-Broccoli

Just today I had a conversation with a friend, who is trying to commit to a healthy lifestyle and broccoli was one of the foods she was trying to eat not particularly liking it. You would be surprised how much difference a little cheese and garlic can make. In this particular recipe I was also trying to save broccoli that spent too much time in the fridge and starting to turn yellow.

Perfectly Roasted Broccoli Zuccini
Prep time: 10 mins
Cook time: 30 mins
Total time: 40 mins
Ingredients
  • 2 large heads of broccoli (take it apart)
  • 2 sliced zucchini
  • 6 cloves toughly chopped garlic
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 of lemon (squeezed juice)
  • 1/2 cup of shredded Parmesan or Romano cheese
Instructions
  1. Mix zucchini and broccoli in large bowl and coat vegetables with olive oil. Add garlic, salt, and pepper. Toss it well and spread it on the baking sheet. Roast it at 400 degrees for 20-30 minutes, stirring it occasionally.
  2. Transfer it into a serving bowl and drizzle with a little more olive oil. Add cheese and lemon juice.

    Cheese can rescue many a vegetable from the doldrums. I roast all my vegetables. I think it brings out their natural sweetness

    Adding cheese is how I got my kids to start eating broccoli. It’s such a great combination. I love the addition of zucchini to increase the flavor and nutrients. Can’t wait to try this one!
