Better Than Ketchup Ajvar Dip

Ajvar and aijvar (Cyrillic: ajвар/aивар; pronounced [ǎj.ʋaːr]) originated in the Serbian cuisine, and for a while was known as “Serbian salad”.It became a popular side dish throughout Yugoslavia after World War II. It can be sweet, slightly spicy or very hot.

Vegetables for Ajvar Paleo Dip

  • 2 whole Large Eggplants
  • 3 whole Large Red Bell Peppers
  • 2 cloves Garlic, Chopped (optional)
  • 1 whole Lemon, Juiced
  • 1 teaspoon cumin (optional)
  • ½ cups Olive Oil
  • 1 teaspoon Salt
  1. Heat oven to 475 degrees. Wash eggplants and peppers and arrange them on a baking sheet. Roast until their skins blister and turn black. (about 30 minutes). Pepper for Ajvar Paleo Dip
  2. Put vegetables in a container and let them sit there for 10 minutes or so.
  3. Peel off and discard blackened skins, stems and seeds. Combine vegetables in a food processor. Blend it to the desired consistency. Chunky or smooth? The choice is yours! Add garlic, lemon juice, and olive oil.

Leftovers can be refrigerated in a jar for up to a week and would work out perfect for any members of your family, who prefer bite-n-go lifestyle.

      HAHA – You are thinking of the zucchini spread. Love that one! Eggplant version is a bit different – slightly different texture plus red peppers. It’s Serbian recipe

    The dip sounds great! I make my own ketchup out of red peppers (I’m allergic to tomato), and I think it’s better than store bought ketchup 🙂
