Turchicken Chili

Turchicken-Chili-011-PInterestThe perfect combination of flavors in this chili is thanks to the use of both chicken and turkey (get it- turchicken chili?) With tons of lean, mean and beans this chili will prove to be the perfect dinner for any health nut… or rural cowboy. So get the crockpots out…put on your cowboy hats and scream “YAHAWWWWWW” this chili is here to stay! Continue reading.

Enchilada Chicken in the Crock Pot

Enchilada-Chicken-in-the-Crock-PotThis low carb Enchilada Chicken was created when I was craving enchiladas and I knew the tortillas would just be too many carbs for my food plan. I decided to make my own recipe with no tortillas involved. Just yummy enchilada sauce, cheese and high protein chicken! Continue Reading.

Creamy Orange SoupSpoon-full-of-carrot-sweet-potato-soup

What do I suggest? I think making simple twists to the food that we cook every day would take us a long way. Even All-American favorite dishes like mashed potatoes, roast turkey, green bean casserole, and pumpkin pie with ice cream  still taste great when cooked and served a bit differently. Continue reading.

Salmon Patties Over Stir Fried Vegetables

salmon-patties

This recipe came from watching a lot of “Restaurant Impossible” and “Kitchen Nightmares”. They always seem to make crab cakes at the finest restaurants. We don’t eat crab, as we are Kosher, but I figured salmon couldn’t be much different to work with, right? After playing around with the seasonings and such, I came up with a winner in our house. I hope you enjoy it as much as we do. Continue reading.

Quinoa “Mac” & Cheese

quinoa mac n cheese 4

I really wanted to name this post easy quinoa-aroni and cheesy. But I decided to go a more classic route – quinoa mac and cheese. Not only is this recipe simple, it only has 7 ingredients. (Oh, you already know that from the title.) If you were to use regular pasta, it actually only puts you at about 9, so you could still add another veggie or spice. Continue reading.

These recipes are a great reminder that gluten-free doesn’t make you can’t have your favorite flavors. Can’t wait to try these.

Gluten-free or not, these look really good. I love a good chili, but this is a unique take on it.

I really love the salmon patty recipe. It looks good and I bet tastes even better. Salmon patties if introduced early I think make kids like them, if not it is a taste they might not care for, luckily we got them early.

I might make these this week!
