I crave salad! Not too many pregnant women can be proud of this fact, but my pregnant body craves fruits and vegetables. I know that is pretty weird, ah?  However, my pregnant rule is – if the craving strikes, roll with it. And who is going to complain about craving healthy food? Not me!Cucumber Salad that you would give you enough fiber to feel good about yourself

  • 1 English cucumber, sliced
  • 1/2 small red onion, thinly sliced
  • 1 tablespoon white vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh dill
  • 1/4 cup feta cheese

  1. Combine cut cucumber, red onion, vinegar, sugar, and salt. Stir to combine.
  2. Add chopped dill and feta cheese. Stir again.
  3. Serve salad chilled.

Extremly simple to make salad that will give you the fiber you need

    Cucumber salad is one of my favorites and you MUST have the dill, I like extra dill lol 🙂

    Cucumbers are one of my favorite veggies! I actually make pickled cucumbers with rice wine as a side once a week, so I will have to try this.

    I love cucumbers so I can understand wanting to eat them. It’s better than craving something like caramel corn, eh? The salad looks yummy

    Oh my goodness! That looks delicious! One of my favorite snacks when I was pregnant were marinated cucumbers. I got it from when I traveled to China, they were served as an appetizer (along with deep-fried chicken’s feet LOL) and they taste like cucumber chunks marinated overnight in zesty Italian dressing, so that’s how I made them. I’ll have to try this one; Thanks for sharing your recipe!

    That looks yummy, pinned for later. I’m not really a feta cheese fan, maybe goat cheese would work?
    Never thought of adding sugar to a salad, too!
