Easy Gluten Free Banana Bread

Easy Gluten-Free Banana Bread is a quick and easy way to make a delicious homemade baked dish. This gluten-free banana bread recipe is high not only gluten-free but high in protein. Easy Gluten-Free Banana Bread is a delicious sweet accompaniment to a hot beverage to serve as a dessert with some vanilla ice-cream. This gluten-free banana bread is great eaten on the day of baking or can be kept for up to 4 days and served heated or toasted.

This recipe makes 1 loaf (see the print card below)

Ingredients:

  • 2 cups gluten-free flour
  • 1 1/4 cups of white caster sugar
  • 2 cups (1 lb) fresh banana, mashed
  • ½ butter or margarine
  • 2 eggs, beaten
  • 1 cup mixed nuts, chopped
  • ¼ teaspoon of bicarbonate soda
  1. Preheat the oven to 350F (180C), and lightly grease a bread tin (2 lb mold works best).
  2. In a bowl or low-speed mixer, whisk the butter and sugar until the mixture is fluffy.
  3. Add one of the eggs to the mixture, beating well, and repeat with the other egg. Then, add the bananas to the mixture, and beat until the mixture is smooth.
  4. Into the banana mixture, add the gluten-free flour, bicarbonate of soda, and the nuts and stir until the mixture has an even consistency.
  5. Pour the mixture into the bread tin and bake in the middle of the oven for 60 minutes or until the banana bread is firm and has risen.
  6. Turn out the gluten-free banana bread from its tin and allow it to cool for 20 minutes before slicing.

    Living a Gluten free lifestyle sucks. I am always looking for a new gluten free recipe to try out! I’m amazed! This bread looks so light and moist. Usually GF bread it thick and heavy!
