Since I had a baby #3 back in February and went back to work, I started getting “How to do you do it?” questions more and more often. How big of a jump is it from 2 to 3 kids? I think the most complicated part is trying to tackle the blogging business, a full-time job, kids activities and homework, and a baby all the same time. If I ever wanted to pretend to be a super mom, this would be it, but between the sleep-deprived nights, busy work days and super busy weekends, I am just going to say it straight – I cannot do it all!
That is why I started looking for the shortcuts: I pay my kids for doing house chores, combine kids’ activities to avoid extra trips, and make changes to family dinners. I often don’t have time to cook and only remember of dinner, when kids ask to eat. My solution? A big freezer! I discovered that many stores offer freezer to table solutions and I am taking a full advantage of it!

Pre-heat the oven to 450F degrees.
Carefully pull fish fillets from the plastic bags and put them into parchment pouches seasoning up.
Fold the pouch, put pouches in a shallow baking pan and place in the oven for 20 minutes.
I now have 15 minutes to do all the other things I usually forget to do. For example, I routinely forget to check my kids’ homework. I still have time for a quick diaper change, a fresh bottle of milk for the baby and a load of dishes (if I hurry).
Back to the freezer. However, my personal favorite is Mediterranean Quinoa with Feta Cheese. It makes a perfect side and takes the dinner complete.
