My sister walked into the doors yesterday and instead of Hello, she said: What will we grill tonight?
Oh my, it is 6 pm and I didn’t plan to cook a fabulous dinner. There are a few frozen things in the freezer, but it doesn’t seem like a foreseeable option to go from a freezer to a plate in under forty minutes.
“But I want something awesome and delicious!”- my baby sister is determined to fire up the grill and if I want her to help me with the kids later on, I need to figure something out.
Wait, the freezer hides something that can and will work – the Cornish Hens I picked up a little while back at the local Walmart.
Honey, fire up the grill – we are cooking out tonight!
Quick Guide to a Backyard Grilled Dinner
Grilled Cornish Hens with Asparagus, Mushrooms, and Corn on the Cob

Time: 40 minutes
You will need:
Marinade:
- 6 Tbsp of Kikkoman low sodium soy sauce*
- Lime Juice (squeeze juice out of 2 Limes)
- 1/4 cup of cooking oil
- 4 garlic cloves, minced
- 1 tsp ground ginger
- 1/2 tsp freshly-ground black pepper
- 1/4 teaspoon salt
Hens:
- 2 Cornish hens* (about 1-1/4 pounds each), halved
Vegetables:
- Asparagus
- Mushrooms: remove stems, slice caps
- Corn on the cob
DIRECTIONS:
- Start the grill.
- Put the frozen hens in the packaging into the cold water for 10-20 minutes
- Prepare your marinade by combining Kikkoman soy sauce, lime juice, oil, garlic, ginger, pepper, and salt.
- Remove hens out of packaging and place them in the bowl. Pour half a cup of the marinade over it and let is marinate for 10 minutes.
- Wash ASPARAGUS and cut the tough end. Put asparagus spears in a separate bowl and toss it with 2 tbsp of the marinade. Place it on the grill and cook it for 12 minutes (turn it once half way through).
- Toss the MUSHROOMS with the 2 tbsp of the marinade and grill it 5 minutes on each side.
- Clean the corn rub it with butter, sprinkle it with salt and wrap it in the heavy duty foil. Place it on the upper rack of the grill and grill it for 15-20 minutes (rotate every 5-10 minutes).
- Place marinated HENS on the grill and cook them for 12 minutes. Turn and cook for 12 more minutes.
Oh deliciousness! I can proudly call it the best meal of the week!

WE love Tyson chicken and grill breasts and such all the time, but I would’t have thought to grill a cornish hen either. Very cool, and your meal looks delicious. I’m pinning for later. 🙂
