I believe that breakfast time is the most turbulent time of the day for my family. Getting five people out of the house and getting to work on time myself is not an easy task. I am talking properly dressed, well fed, and happy. I often feel like taking a nap by the time I get to work.

Let’s discuss good old breakfast. As much as I love eggs and breakfast sandwiches in the morning, I don’t have a minute to spare in the kitchen. I need a solution that works for everyone can be prepared ahead of time, ready to go when I am, and can be consumed in the car on the days we run late. Besides that, we all know that a good breakfast has to have enough fiber and protein to sustain us for a few hours. Sounds like an impossible task? Do not give up just yet! My Cereal Muffin Recipe. Yes, it is delicious, but when it comes to photography, does it look ok?

Muffins are good, but they are often full of carbs and lack protein and fiber. Healthy cereal is full of fiber and other nutrients but is impossible to eat in the car. But don’t leave the cereal aisle just yet – I have an idea! Did you know grains make excellent breakfast muffins? Surprised? Don’t be – just say #LoveMyCereal and fire up the oven!

Why had Cereal Muffin Recipe?

We usually have five different types of cereal in the kitchen, and I was curious to see if I can put a new spin on our long time favorite cereal and snack.

Cherry Almond Pecan cereal has a great combination of flavors – tart cherries with roasted almonds and pecans, granola clusters and hearty multigrain flakes. There is no need to look for nuts and berries for the muffins – it is all in one box. Besides that, this cereal blend is an excellent source of fiber, fat, and protein. Cereal Muffin recipe holding

You will need:

  • 1-1/4 cups flour
  • 1 tbsp. baking powder
  • 1/4 tsp. salt
  • 2 cups Quaker cereal
  • 2 cup fat-free milk
  • One egg, lightly beaten
  • 1/2 cup applesauce
  • 1/2 cup of honey
  • 2 Tbsp of melted butter
  • 1 tbsp Flax seeds

I substituted regular milk for coconut milk for lactose-free option and used gluten free flour to decrease the amount of gluten. Cereal Muffins recipe in milk

  1. Combine cereal and milk. Let it stand for 30 minutes. If you are looking to cut this time in half, run it through the blender.
  2. Preheat the oven to 400 degrees Fahrenheit
  3. Add an egg and melted butter; beat well.
  4. Add rest of ingredients. Beat just until combined.
  5. Spray muffin pans with a baking spray and fills 2/3 of it with batter.
  6. Bake it for 30 minutes or until golden brown.

Cereal Muffins recipe trio How else can you use cereal in your everyday nutrition?

Looking for more creative ways to add cereal to your everyday diet? Consider one of the following:

Combine wheat cereal and bread crumbs to make a crunchy and fiber-filled fish breading.

Add fiber to your pancake batter

Blend it in your favorite smoothies

Compliment you parfait or banana split

Indulge yourself with a chunky fiber filled ice cream

Of course, you can just munch on it as you go on with you day by carrying fun cereal blends in the ziplock bags – you will keep your stomach happy and save some money by staying away from the vending machines.
