Summer weekends in my family are busy! Where is the lazy summer I was looking forward to? What happened to it? It seems like we try to fit as much excitement in each summer day as we can to make sure we have plenty of memories to last us through the long winter nights
With this level of excitement, I struggle to have dinner ready on time and when it comes to dessert, here is a box of store bought cookies – enjoy!
Not today! I have something special sitting in the freezer, waiting for the perfect moment to jump out and make a memorable impression.
Last Sunday I was browsing the cookie aisle at Walmart, and I came across a demo for the Blue Bunny Ice cream and peaches.
That looked exciting enough to get my imagination going and have this dinner dessert ready.
The good thing about these ice cream sandwiches is that they are easy to make, can stay in the freezer for as long as you want, and are delicious!
The not-such-a-good thing is that it does require several steps and some quality time in a freezer before it is ready. Yes, I know you want things right now, but I promise it is well worth it and so delicious that one bite of it would have you saying: It was so worth it! And with a couple of different cookies, you can even have Battle of ice cream sandwiches right on your kitchen table.
Cookies. Today we are trying Keebler Coconut Dreams, Great Value Fudge Covered Peanut Butter, and Chips Ahoy Coconut Chunky cookies
Ice Cream. Blue Bunny seems like a perfect fit for this project. Pick a flavor you like. We are trying Premium Ice Cream Homemade Vanilla and Premium Ice Cream Bordeaux Cherry Chocolate.
- Colored sprinkles
- Crushed Pecan bits
- Chocolate Chips
- Silvered Almonds
Tools: Cookie cutter
Spread Soft Ice cream onto the baking tray. Freeze overnight.
When ready, get your cookies ready. Take a cookie cutter and push it through the ice cream.
Place it on the cookie and cover up with the second cookie. If desired, roll it in sprinkles, pecan bits, chocolate chips. Put it on the tray and leave it in the freezer until you are ready to serve them… or eat them all at once – your choice.
Ice Cream Sandwich Battle
We tried three different cookies – Keebler Coconut Dreams, Great Value Fudge Covered Peanut Butter, Chips Ahoy Coconut Chunky and it looks like all three made kind of cool ice cream sandwiches. Of course, it’s difficult to mess it up with the Blue Bunny ice cream varieties, but still one of these cookies showed its superiority and style – stood up in a crowd and owned the competition.
Keebler Coconut Dreams
We paired up these rich cookies with Premium Homemade Vanilla Ice Cream. This cookie has a lot to offer, and vanilla seemed like a perfect fit for this sandwich. It’s a bite of something very special.
Great Value Fudge Covered Peanut Butter
We felt that chocolate covered peanut butter cookie deserves a very different feeling and that’s why we went with Blue Bunny Premium Ice Cream Bordeaux Cherry Chocolate. The Bold flavor of the ice cream complimented the chocolate beautifully.
Chips Ahoy Coconut Chunky
This cookie is slightly bigger – more than a bite and less than three, It can go with any ice cream or the combination of two.
It’s neutral and lets the ice cream shine. In our eyes, it’s a total winner!
